Growing up, that iconic blue box of Kraft Macaroni and Cheese was pretty much what represented our entire being. We lived for the commercials featuring their mascot, the Cheesasaurus Rex. There was nothing more exhilarating than watching him master cheese-related feats such as surviving a car wash of neon orange sauce. He emerged from the car wash, not the frazzled orange dinosaur-man (?) that he was before, but a total 90s cool guy, complete with black shades. We even had a t-shirt with his likeness. The love was that strong.
For a while, we thought that cutting back on dairy meant inevitably cutting mac and cheese out of our lives — oh, how wrong we were about that. It turns out, it’s easy, like ridiculously easy, to make macaroni and cheese completely dairy-free. Not only that, but there are so many ways to do it. For example, you can make a roux-like cheese sauce with vegan butter, flour, and nutritional yeast like in this Easy Mac and Not Cheese or, if you’re feeling healthy, you can make it entirely from veggies. No, we’re not joking and yes, it tastes legit.
